Pitch of a prop? newbie question

The boat i am looking to buy it for is a 1993 Thompson bow-rider 1800 with a 3 litre mercruiser, i think it originally had a 19' prop.
i don't know anything about pitch apart from the Iboats quick guide where it said the bigger the pitch the more it can travel in one rotation?

so would i be right in assuming that the bigger the pitch the higher the top speed?
and if a boat did 30mph with a 19' how much difference would the biggest pitch available do?
Also stainless steel or aluminium?
