Problem with under heating or overheating...Maybe

When I idle my temp gauge reads 165-170, but as soon as I increase throttle the temp gauge starts to drop down to 140. Is this normal or is it an impeller problem. I checked everything manifolds, hoses with a temp gun and nothing over 143 when idling. Any explanation would be greatly appreciated. I have 160 degree thermostat in it and it was replaced in April.

Are you sure your t-stat is working properly? I had a Cruisers with the GM 350 that did the same thing. It ended up not having ANY t-stat in the housing. You said you put a new one in...I would if it is bad and just stuck open.
