The first of many great grilling recipes is just below. And, coming in April on the iboats "I Love Boating" FaceBook page, Kuuma will be starting a contest to win one of their "Stow & Go 160" grills. [FONT=Trebuchet MS, Lucida Grande, Arial, sans-serif]New Zealand or Spanish Mackerel stuffed with spinach, mango, sweet onion and garlic. Buy or catch two fish for this recipe. We use a 1" thick piece of rough sawn oak plank that we soak in water for 12 hrs before starting to grill. [/FONT]
  • [FONT=Trebuchet MS, Lucida Grande, Arial, sans-serif]Mix stuffing for fish, 1/2 bag of spinach, 1/2 large mango, 1/2 sweet diced onion, 1 diced Anaheim pepper, 2 cloves minced garlic [/FONT]
  • [FONT=Trebuchet MS, Lucida Grande, Arial, sans-serif]Put stuffing in gutted whole fish, lay on one side in the foil (foil is open on top) and fold foil up on edges so it will contain juices [/FONT]
  • [FONT=Trebuchet MS, Lucida Grande, Arial, sans-serif]Coarse slice the rest of onion and spread it on top of the fish [/FONT]
  • [FONT=Trebuchet MS, Lucida Grande, Arial, sans-serif]Place the fish on the foil on top of the pre-soaked oak plank and place it on the pre-warmed grill [/FONT]
  • [FONT=Trebuchet MS, Lucida Grande, Arial, sans-serif]Cook on the grill on low heat for 45 minutes [/FONT]
