I would like to put a couple of gallons of gas or solvent into the tank of my boat, drive around to slosh it, and then pump it out fully to sort of flush the tank.

I have seen reference to an automotive type fuel pump for this application.

I have also seen a pump with long tube designed to fit down an oil dipstick tube to pump the oil out of an auto engine.

Would either of these do the job?

I would appreciate any opinions and product references.

TIA

the best and easiest to me is, remove the sending unit, use a hose small enough to go thru the transom drain, and siphon it out. then use an extendahand, paper towel, and clean up the last. dispose of properly, fire hazard.

Wal mart, home depot or like stores sell a plastic hand pump for under $10 commonly used for kerosene heaters. 2gal would be a fair amount of pumping by hand but it should start a siphon and its alot cheaper than some sort of fuel rated mechanical pump to be used once in a while.
If the suction hose provided is not long enough you can add a section of hose with a clamp. I have added hose to bring total of suction hose to 5' but I would say this would be about the max.
I would not attempt to siphon by mouth. It doesn't take much gas in the lungs to DIE plus gas tastes like...Well, gas:p

Old dead primer bulbs make great siphon starters.

Just sayin' is all.
