Quadrajet on 5.7 weird problem

Well had the carb rebuilt, was water flooded, so complete rebuilt.

I changed the plugs/wires, retimed the OMC 5.7 to 8 degree, adjusted the carb, all was going well.

Was finishing adjusting throttle/idle when it begin to stall, would not start back, (dieing after 1-3 second), motor was at 180-200F, looked like it was not getting fuel so we put the front of the boat higher, would start but die again.

removed the carb, fuel pressure was good on the hose, put a spare Car carb we had laying around, started right up, running as good as the other once it was adjusted. 650 rpm no problem.

So what give? Intake/carb gasket is a wide open in the middle (4x4 in hole, countouring the 4 barrels) thick gasket.

Fuels filters are new, engine was running good at first today after the timing, 650 no problem, then needed higher RPM (1000) to keep it running than stalling started.

I'm currently thinking of putting the "overflow block", the flame arestor on the car's carb and plug all the vaccum hole and so be it.

Carburator is a Merc Repower 2004, had 2 rebuilt in 2 years, and the spare Car carbs, I can buy it for 50$ from an uncle which has an electric choke instead of the Divorced choke and DO work good.

Any help would be appreciated.

well I put the car carburator with the overflow directed in the primary like the marine one, made a bracket to fit the throtle cable, put the marine flame arrestor on it.

Boat running at 650 rpm stable, throttle response is really great ( secondairy open when pushing it, shifting in gear work well. Put the timing right on the 8 degree mark.
