Random overheating issue Volvo 5.7GXi-E

I apologize but this is going to be a long explanation so bare with me....

In my Monterey, I have a 5.7 GXi-E with about 220 hours on her. For her life, she has been in saltwater. About a month and a half ago, I took the boat up the Mass coast about an hour, averaging maybe 3400 rpms, no issues. After a few hours there, on our way home, alarm went off. Oil pressure was normal, temp gauge was normal, which leads me to believe manifolds were at high temp.

I limp the boat home, next morning I remove impeller/o-ring, inspect both, looks fine, and I put both back in (did not replace since visual inspection looked great). I took the boat out right after, full throttle for about 20 minutes, no overheating, no issues at all, no alarms.

The next weekend, I take the boat out, after about 5 minutes around 3200 rpm's, temp rises to 200 degrees, alarm goes off, shut down and get towed in.

I had a mechanic come down, he said since it's occuring at random times, I may have a partial blockage. He replaced the thermostat, the impeller/o-ring, and snaked the intake lines to see if anything was blocking it.

Boat ran great for the next 2 weekends. On the 3rd weekend, I took the boat across Mass Bay on a 2 hour trip there, 2 hour trip back, no issues at all.

This past weekend, I was out friday, cruise around 3600 rpm's into boston harbor (15 min) no overheating, I throttle down into a no wake zone, and I notice the temp gauge slowly slowly climbing. Finally it hits 200 and alarm goes off.... I anchor, and open the hatch.

There seemed to be a rusty water (did not smell like oil or chemical) leaking from the impeller. When I opened the hatch, I restarted the engine and there seemed to be a low low grinding sound, and something that may have sounded like a ball bearing moving around. I had the mechanic come back down (who actually slipped off a boat and can't move his back so unfortunately he can't do any work for me for the time being).

He hopped down into the engine room, saw the leaking water, listened to the water pump and wasn't sure what it was. He said he didn't hear anything churning or ball bearing noise from the water pump. He told me to pull the impeller, inspect it and the o-ring, may have been a faulty part, but it wasn't. both looked fine.

I took the boat out Saturday afternoon, as I was idling out to the end of the no wake zone, temp gauge was reading just below 175 (It has never really rose about 150ish), I put the hammer down to about 3600 rpm and the temp dropped quickly back to 150. Drove her for about 20 minutes at the same rpm, slowed her down and the temp rose a little again to about 160-165. while the engine ran, I hopped down into the engine room, I felt the impeller, it was cool, and I felt the manifolds, both were relatively cool, no overheating from them.

Drove back to port, idled into the no wake zone, engine temp rose back up from 150 to 175-180 before I docked.

I took the boat out the next day to test again, and I wrote down the readings, which seemed normal, starting from leaving the dock:
1400 rpm @ 150-155 degrees
2600 @ 155-160
3900 @ 150-155
4400 @ 150-155
2400 @ 155-160
1400 @ 155-160
2800 @ 150-155
4400 @ 155-160
1500 @ 160-170
1000 @ 155 while docking

I know this was a really long read and I do not blame you if you got bored but I'm just looking for some guidance since my mechanic is on the mend for a little while.
