Got a big red snapper recently, In the frying pan melted butter, added small chuck of finely chopped garlic,seasoning salt,chopped onions and cooked it until the meat is tender, use a fork don't overcook.
Girlfriend loved it ;)

Filet it out so you have two good filets, boneless.

Pan fry

Sprinkle liberally with pepper and sea salt.
Sprinkle with garlic OR lightly smeer with fresh crushed.
Lightly sprinkle dill and a touch of chive.

Oil the pan with olive or vegetable and pre heat to a medium heat.

Put the prepped side down on the pan/foil and repeat the steps for the top side of the filets also adding a little olive or vegetable oil to top of fillet. Butter adds good flavor, but my favorite is the vegetable oil and protects from sticking to the pan. If my wife is sharing the fish it's olive (heart first).:p

Cover and cook on one side, no flipping, until cooked through.

BBQ

Same as above but make a foil pan to put the filet in, do not wrap fish with foil this is a common mistake and don?t cook directly on the grill another common mess maker, you will get the BBQ flavor by keeping the BBQ cover on and stays moist because the juice does not drip off. The foil should have a ?? lip on it to hold the juices in. On gas medium heat, on coals spread the coals to both sides so there is not direct heat under the foil only on the sides. Add some blocks of mesquite, not chips, blocks are much more flame resistant.
