Repairing omc, check risers? Thru hull

Im repairing a 1988 chaparral omc 5.7/cobra. The problem was siezed engine from water intrusion through exhaust valves. What is the best way to test or check the risers/manifold for water leaks into exhaust passage? Also are the rubber flappers on thru hull exhaust simply enough to keep water from flooding back into engine? Thanks
