Replacing seats

I am getting ready to replace the seats in my 19ft Wellcraft. The present seating is 2 back to back lounge seats and 2 rear seats. I was wondering what it would be like to replace the port side lounge seats with a side facing bench seat. There has to be some kind of disadvantage to this that I am not thinking about. Of course I am a new boat owner and no idea what I am doing.:)

Might make fishing tougher (if you fish from this boat).

You might be tempted to exceed the capacity of the boat if you increase the seating area.

Was debating if 2 people sitting sideways and be able to look front and back vs one looking forward and one looking back. I wouldn't put in a bench that would sit more than 2 people so not to increase seating. I was thinking it might be a little better for fishing since the backs would not be in the way. Would be able to kneel on the bench.
I was even thinking of keeping the base from the back to backs and maybe mounting regular folding seats. Possibly on a pivot.
