rolling torque

i plan on replacing the double bearings (input shaft) on my upper alpha one gen 1. I have read that the rolling torque for new bearings is 6-10 in. pounds. My question is I have read in the manual that a bearing is considered used if rotated once, in which case the setting would be 2-4 in. pounds. so do you still set the torque to 6-10 or 2-4. when peplacing these.

You missied a couple important words there, "Under Load", since the drive is not assembled, it can't be under load, you would stick with the 6-10 rating.

Do this adjustment with care. DO NOT over tighten it. If you do, dismantle and start over.

If I do over tighten could I separate the latter bearing from the first with a bearing separater a little bit and then try again.

No, you don't have to dismntle it. I just remove the nut, hold onto the bearings with one hand and hit the nut end of the yoke with a mallet (Not a steel hammer) which will release the preload pressure you had on the bearings.
