Any reason why it would not be a good idea to put sealant or anti seize on brake bleeder screws and the fitting that screws into the calipers?

A dab of anti-seize on the threads only. No sealants. The flare of the brake lines, and the taper of the bleeders work just fine for sealing.

Anti-Seize on the threads only.
Do not contaminate the brake system.

And when tightening the fittings; snug them up and check for leaks.
If you have a leak, tighten a bit more, Do Not crank the life out of the fittings or you WILL have leaks that require the replacement of the lines.

Flared fitting do not require extreme tightening to get them to seal.
Many issues with leaks come from over tightening. Don't get carried away!

Sounds good. What about grease type for packing wheel bearings with disk brakes. Okay to use regular Multi purpose marine grease like Stay-Lub? The only High temp grease i can find locally is not specific for marine use and has a lithium formula.

Find some high temp bearing grease of some description, lithium is irrelevant to the equation It may save you a wheel bearing/hub/axle/trailer, etc ...
