Is there a general rule of thumb as to how to set the motor at the correct height for best performance. Where should the Anti ventilation plate be in relation to the bottom of the hull? How far above, or below the bottom of the hull.

There is no "exact" measurement. Trial and error is what determines the optimum height and it is usually dictated by how much height the prop will take before losing bite. Loss of water pressure is also a concern since you can still have bite but the water inlets can't get enough water. So adding a water pressure gauge is recommended if you start playing with engine height. You would be safe however if you started with the AV plate no lower then keel, or an inch above it.
