Slow setting epoxy/adhesive needed

I need to maximize my work time when I glue the sole to the stringers on my boat. I have a lot of area to cover as this boat has three very wide stringers. I am working with Raka epoxy using slow hardener but in the current Houston heat it is too fast. Is there something out there slower than this I can use?

Once the epoxy is applied to the wood, it is OK for it to harden. Why not put the epoxy "bucket" on a bed of ice to keep it cool and liquid.

Keep the epoxy in the fridge before mixing it. After mixing it spread it out thin right away so it won't heat up in the pot. I've mixed too much epoxy at a time before and stuck the pot in the freezer for a couple hours and it stopped the cure. The epoxy actually froze. After taking it out of the freezer it thawed quickly, I applied it and it cured normally.

You can also just mix a little at a time rather than a big batch and keep mixing the new batches in the same pot without worrying about the residual from the last batch kicking in the new resin. This works great with two people, one to do the mixing and one to do the work.
