In your opinions, which option is better a stainless steel with slightly less pitch at 11" or an aluminum prop with a slightly greater pitch of 12"?

These are the only 2 highest pitch options I can find for a new 2008 Yamaha 2 stroke 9.9 hp.

I'd like to get my 10ft inflatable up around 20 mph. Am currently hitting 16.5 with a badly damaged, spray painted, 9" pitch aluminum prop via gps mph. Something like 27% prop slip.

I'm not a prop guy, but I replaced mine last year with a plastic Piranha and am running a 10 diameter with a 9 pitch on my Merc 9.9. I've got a 10 foot Achilles and it's a bit slow to plane with me and my two sons on board, ages 10 and 6. If my wife comes along it won't plane at all so I just ordered another set of blades with a 7 pitch. I really like the prop, it's only about $50 for an extra set of blades and I can swap them out in just a few minutes, $16 for just one if I hit a rock and chip it. I highly reccomend just calling the Piranha folks and go with their reccomendation since they seem to understand inflatables fairly well.
