Splashing Water Over Transom

I have a 2006 Yamaha F25 motor mounted on a 14' Livingston(double hull) boat that keeps splashing water up and over the transom after i plane out and going 3/4 throttle to wot. At that point i back off to about 2/3 throttle and no more water coming up and splashing. Now this motor is rather heavy(180-190lb.) where as the motor i replaced was about 120lb. could this be a reason for all the splashing?? Any advice would help.

The heavier motor will definitely make your transom lower in the water than you had before. Keeping that in mind don't decelerate so quickly. Check to see if the engine might be too low on the transom, maybe raise is up a little bit if possible.

your engine is to low or the wrong shaft length.
keep the cavitation plate about 1" above the bottom of the hull.

Motor is a long shaft and my transom is 20-21" from top of transom to the keel. Would using the tilt & trim help or hurt? Since there is alot of weight on the stern i'm thinking of moving the gas tanks(main and small kicker) achor to the front of boat for more weight distribution.

using the trim will help.
making sure your ventilation plate is about an inch higer than the hull bottom will help.
