I fish St. George regularly( at least 4 times a yr.) If you're staying in the Plantation your good just about anywhere you go. The old bridge which is now a fishing pier is pretty good at times but the channel cats will take most of your bait. Surf fishing off the beach is usually pretty good too. The park at the east end is also good for bay fishing. Just fish with the outgoing tides right off the oyster bars. Reds are good as are trout and blacktip shark there. If you paln to charter a boat, Book Me A Charter is a great company. I went out with them a few times now and have never been let down. Sorry to jumble a little but I love to fish there and would move there to be a charter captain if my wife would have it. Have a good time and catch lots.
