Stainless is the premium prop. The metal is stronger allowing the blades to be thinner with no flex. A thinner blade does not disturb the water as much when it cuts through the water. This means less energy lost to just turning the prop. The strength maintains shape which means the prop can be curved, cupped, multi angled, whatever to make the water move efficently for your application. The only down side is if you damage the prop severely it may not be repaireable where an alumnium prop would. It is also more expensive to repair.
