Steering help please

Not sure if this is where i should post this oh well. ok i own a hallet ski boat 17.8f it had a rear mount 351 with a v-drive anyway i i found a real problem with this when you took your foot strait off the accelrator the back of the boat would go so low in the water that the wake would flow into the back of the boat also it was not the best for room. the next problem i found was that when i turn to the right the boat would turn not to bad but if i went full lock the boat would tip right over an water would flow from the front of the hull up the side an into the back of the boat. now if i turn to the left i wouldnt even get a quater of a turn an the boat would tip right over an tons of water would flow in from the front. now i was told that i should have cav plates on the boat all rear mounts should so i decided that before this summer i would move the engine to the center so i would have more room. so i pulled it all down moved the engine mounts sent the tailshaft that goes to the v drive from the engine off got it all balanced got it all back in the boat took it out this summer still the same problem. does anyone know what i should do. should i put cav plates on do they stop it from tipping when you turn. its becoming very anoying i though maybe my rudder was ent but it looks strait from what i can see. any ideas what would cause this problem. any help an suggestions would be great
