Steering Issue

I own a 1993 Four Winns Sundowner 215 with Power Steering and my issue is that when I turn the boat (in either direction) more than a certain angle I get a knocking sound. Once it starts knocking and I turn it more it just gets louder. My mechanic replaced my Gimble bearing and Universals this spring and once I heard this noise he checked again and can't pinpoint the problem. The knocking has the same pace no matter what RPM I am running so I do not think it is the drive shaft angles. Any comments, advice? Much appreciated.

I'd be back there listening while the boat is driving to pin point the issue, the gimbal and u-joint change is a safe bet.. but.. need to get ears on the issue while it's happening in that case.
