Steering & Throttle mechinism disconnect NEED ADVICE

I am in the process of trying to prepare my boat to actually use it instead of working on it. (HA)

I need to remove the center console that sits on top of the last section of Plywood deck that needs to be removed to facilitate plywood replacement..
The console is bolted through the plywood into Aluminum supports.
Once I remove the console, I can remove the plywood.

FUEL tank is below this section of deck.

I have photos of INSIDE the console area and need advice on:
Disconnecting the steering connections
Disconnecting the Throttle / Gear shift mechanism

all you cables will either have to be cut around to get the deck out. also put thru new deck. i personally prefer one hole sealed and a trim ring around it.

I appreciate that info but I need ADVICE on how to disconnect the steering and throttle assemblies from underneath the console.
I can then unbolt the console and remove it.

Once I have it off, I can remove the existing plywood, use it as a template and make a NEW deck.

The wiring etc is simple to disconnect but the 2 items above, I simply want advice on the didconnect.

ADDITIONALLY:

Once the console is OFF, I can remove the piece of plywood, use as a template and make a new one.

This will include predrilled holes for the cables and wiring.
