steering wheel removal in 82 Cobalt

I am trying to remove the steering wheel on my 1982 Cobalt 19' so I can replace the dash gauges but can't even get the center plug off. I have a Morse rack and pinion with what appears to be a real nice SS three spoke wheel. The center hub appears to be some kind of composite material with a slight dome shape. I have removed a small allen head screw that I thought was holding the hub in but cannot get this to budge. I have even chiped a coulple edges on it already and it is fixed tight. Looks like I might have to chisel and drill the whole thing out. Has anyone worked with this type of assembly?

I got the wheel off. First I had to drill out the composite center hub because it was completely stuck. The wheel itself wasn't too hard to remove with a little penetrating oil, heat, and a hand held (mechanical) impact tool (sears) to remove the nut.
Biggest issue now is what to replace the decorative center hub with. Maybe I can find someone with a wood lathe to turn one out of teak to match the rest of the trim.
