You can get stencils from places like Avery or Cabela's.
As Bondo said, spray across some grass.
But here is what I did to camo a canoe for hunting: painted the hull first with an OD paint (from the mismatched pile at the the paint store and a few squirts of color). If yours is already painted a good base, the better. Then I took my next color (dark brown) and put it in a roller pan; took several bunches of marsh grass, and some leafy branches; dipped them in the paint and slapped them along the sides, floor etc in a vertical pattern. "Indian paint brush." had a little Jerry playing to inspire the earthy artistry. Then put another color on top.
Ducks don't need reality; the important thing is to break up sillouette. A well-painted side of the boat (14" freeboard?) will only be seen by the ducks swimming up to your boat. Even a stooling duck when it gets in range is aproaching at 30 degrees at the lowest. (As you can tell, I have discussed the issue with my hunt club members, who brush our blinds solid from the ground up the first 3'--we have the most well hid boots on the marsh for those swimmers!)
