I've never removed paint on these boats so I haven't any experience, but chemical removal is the way to go. Your way may work great or search the forums for other methods. Members here have varying degrees of success with different chemicals and paint types. It's a high quality aluminum, but do a small spot first to check that it isn't caustic to the aluminum. As for the original finish, it'll be removed, it isn't very resistant when worked on. After removal I'd let the aluminum naturally oxidize over time. It'll protect the aluminum, look good and be no maintenance. For most of the old boats the original satin finish does normally disappear from weathering and wear.
To try a simple paint removal method, use common brake fluid. Forum member 1959_FDR here had great success with it!
