Stumble issue Carb adjustment?

I have a stumble issue with my Volvo 2.1 liter 1985 bayliner AQ125B.
Was running good last year till I hit some wake, then lost minor power, took
carb apart and found crud, cleaned, installed carb kit. Also installed hot spark
electronic ignition parts along with new spark plugs and a water fuel seperator
(did not have a filter one before)
Now I have a stumble at take off, sound like a gasp for air then takes off.
Tried to adjust carb but I'm an electrical person not a motor guy.
Pulled spark plugs and according to manual it is running rich, but I also do a lot
of trolling, this I read will look then same as a rich mixture.
Timing is 6 deg BTDC @ 750 rpm's
Also put on a new fuel pump.
Also forgot to mention it has a Solex 44 PA1

Any help? Thanks in advance.

Had it on the river today, 26 mph @ 4300-4400 rpm's.

Still a lose of 4-5 mph with boat odometer did not have a tach before not sure
what the rpm's were before.

Any thoughts?
