I just installed new Faria gauges. Motor is a 96 Merc EFI 175.
The old tach was set on 5.
I set this tach on 5 also.

My first trip out in this boat is showing WOT at 7000rpm with a 25p prop......this can't be right.
I just think there is no way this 175 will pull a 19ft bass boat to that many rpm, and, wouldn't the engine shut itself down before then?
Any idea what number I need to set this tach on?

The EFI engine has a rev limiter. You should use a shop tach to verify the rpm shown on your new tach. Hard to say what model tach you bought, but most Faria tachs set by pole numbers, and your Merc EFI has 12.

12 pole or 6 pulse, whichever is indicated on the tach's selector switch.
