Not sure if this matters for each brand of boat/engine, but if I replace my current tach with hour meter, with a new tach with hour meter, will the hours reset, or be lost, or will they continue at the same hours?

be lost, the meter is what registers. all it is a clock, that runs while the motor is running.

Actually, most after market hour meters run when the ignition is in the RUN position. Doesn't matter if the engine is running or not. But since most folks doen't have the key on with the engine not running, it is a moot point. There is no ignition connection to the hour meter itself. Just 12 volts and ground. But then my GMC Yukon has an hour meter and it does indeed accummulate time only when the engine is running. The new breed of highly computerized engines log run time but its easy to do that since the computer is capable of easily handling that task. My Suzy 4-stroke momentarily displays engine hours using the tach -- but there is no separate set of digits representing run time.

You will loose the hours on the tach, but since you have a GXi engine, it's fuel injected and has an ECM that also has actual engine hours. So anyone with a diagnostic tool that can read the ECM can find the actual engine hours. Of course, if the ECM is replace for any reason, so much for engine hours.
But the ugly fact is, high engine hours seldom kills marine IO engines. Water is usually the cause of an early demise. Usually do to corroded manifolds/risers or gastet between them.
