Temperature with a temp gun what should it be??

I am trying to watch my temp in my new motor very closely by using a temp gun. Where and what would be the best temp to look for I have been seeing around 155-161 at the thermo housing.

Probably somewhere around the same but can vary higher or lower. One may be warmer than the other especially at idle.

The same as the t stat.
