Is there a way to test a sending unit BEFORE I install the tank? The tank is out and I am also going to remove the sending unit to replace the gasket, so now is a good time IF there is a way to do it.

yes , with an ohmmeter and you move the float from full to empty and that will change the ohms.

what brand of sender or gauges do you have ? because they will have different readings depending on the brand . I know that Faria posts theirs on their site and a lot of "marine" gauges have the same specs

You can simply connect it up like you usually would to the gauge and lift the float lever and watch the gauge. It is that simple. If anything doesn't look right, you will have it right there to make sure all the connections are correct. No need for anything else. And doing it that way even tests the wires to and from the sensor as well. JMHO
