Thermostat question

I have a San Juan Engineering freshwater system on my Merc V8 and have been running a 160 deg. theromstat. It has not run hot since I installed the raw water pump. I am increasing the displacement of the motor and I noticed in the Merc manual that they call for a 140 deg. thermo. Do you think I should go with the cooler thermo or leave it alone as it ain't broke.

the FWC system normaly uses a hotter stat the 140 is for a raw water cooled system<br /><br /><br />tommays
