I guess I don't see any reason the current sensor would not work with a new gauge.

I didn't know if it would display actual temp or if it only opened once its max was reached, turning on the idiot light, you think it'll work huh?

I'm not finding any "kits" and I've never installed a gauge. Do you just run a wire from the sending unit to the gauge and you're good?

Your idiot light uses a switch, not a gauge sender.
You should be able to install a gauge sender in the engine use the same wire that goes from the switch to the light, and put it on the S terminal of your gauge. The trim sender base is ground. Power to the gauge comes from the I terminal of your ignition switch.
