Two Issues

One I rebuilt cooling system , have good flow to engine . I tested her at idle on cuffs today and guage went to 220 alarm never went off how ever with IR thermometer , thermostat housing read 147 !
Is this a gauge issue or sending unit issue ??
When I cut it off it wants to run on ??? How to stop that ?

With boat in water last weekend I ran it a good 20 miles at 3000 rpm and temp stayed at 145-150 ?

Dieseling is from too rich and or timing off. Very dangerous for your motor as it can kick backwards as it dies, sucking water into the motor.

Check choke, set float level, check timing.

May be time to rebuild carb been on boat 29 years
