Volvo 5.7 temprature question

My volvo 5.7s have always ran at around 150-160 at idle then at 175 degrees on plane. Just recently they started running at 175 at idle then coming off of plane the temps rise up to around 200. Both engines doing exact same thing. Impellers are new and were checked to be correct ones installed. What temps are you guys running? Boat is a 06' Monterey cruiser with 160hr on it.

Ayuh,... Just the sudden change is a Red Flag,.... though it's alittle odd both motors are the same...

If the impellers are movin' water In,...
How are the Risers,..?? Can the water get Out,..??

Does this boat sit in salt water all the time? Is so, when was the last time the boat was out of the water and growth on the drives.

Boat sits on trailer in my driveway. I only have it in salt water 2 times a year, for probably about a week worth of actual time. They are 5.7 Osi-e with XDP drives. I was thinking about starting with the thermostats. The strange thing is there both doing the same thing. They take a fair amount of time after engine start to warm up when they do they go to 175. Then on plane they stay at 175. Coming off of plane they rise. Go back on plane they drop back to 175. At no time will they operate below 175 anymore.
