Is there any safe way to do this. I know an I/O rides on the cav plate putting the prop at the top of the water. Would a swim platform make it ok?

No!
This quote was lifted from a website called "Lifetips". Google it.

The Right Boats for Wakesurfing
Only go wake surfing behind an inboard boat. Never use a wake surf board behind an outboard, stern drive, or inboard/outboard boat. If you can see the boat's propeller, do not surf behind that boat. Wakesurfing behind these types of boats is very dangerous. You also want to make sure your boat has enough power and maneuverability to be successful for recreational wakeboarding. Do plenty of research and don't rule out a used power boat!

Don't :(

If you fall forward you can be severely injured or killed. Not pretty to watch if it's your friend or child. Wakesurfing is a lot of fun and easy to do but it does require a specialized piece of equipment.

You can ride a surfboard on a long line and have lots of fun behind an I/O but it's not the same.

can you surf behind the wakes of big oil tankers?
I thought that in wake waves, the actual water was not moving, just energy was moving through the water, like open sea waves.
But I guess wakes are like shore break waves, where the actual water moves with the wave.

Yeah, do a YouTube search on Tanker Surfing. They use regular surf boards. They also surf tidal bores and standing waves in rivers. The river surfers use wake surf boards.

surfing behind an i/o is a bad idea.

The only i/o I every had produced a very fat wake at just below planing speed, perfect for wakeboarding.

yea, the fun thing about real surfing is harnesing the power of the ocean, and the unpredictable waves.
Riding a big breaking wave is a lot more exciting than riding a never ending wake,
but the wake does last a lot longer, and you can do it in any water.

So can you paddle into a tanker wake, or do you have to get towed in?
I imagine you have to get doing fairly fast to catch the wave.

I've never done it, but the idea of cruising around on a surfboard, behind the boat with no tow line seems kind of cool.

wakeboard boats have tanks or bladders, they pump water aboard to add stern weight to the boat, to create and bigger wake. seems goofy to me. most of us are trying to get out of the hole, rather than stay in it.

Re: wakesurfing behind an I/O

you add weight to only one side, so you throw a bigger wake to only one side. And you never get on plane, just right before you start to plane you have the biggest wake.
