Water In Oil

2001 F115--300 hours.
Did the following maintenence prior to seeing the problem:
1-Changed oil and filter
2-Changed fuel filters
3-Changed spark plugs
4-Changed timing belt
5-Change T'stat
6-Performed Leak Down Test

Ran the boat 3 hours and in checking the oill level when I returned saw the creamy coffee oil. (see pic)

Maybe half of the 3 hours were at pretty low rpm's just idling around looking for crab fishing spots for when it opens.
I normally just use the big motor to run to where I want to go and then use the 8 hp to troll so maybe that's the reason although I would think these motors should be able to handle that.
Last 1\2 hour I ran above 4500 RPMs.

Motor runs good and WOT is 5900 RPM

Did another leak down test and there's no leakage above 3% if that.

Pulled the new T'stat and put the new and old in a pan of water and they both opened at the same time right around 125F or so.

Other then the low speed variable the only thing I can think of, and that seems like a long shot, is that when I filled the crankcase after draing the oil I tilted the motor up quite a ways because it made it easir to fill.

I'm kind of perplexed.

did the level increase?
was the oil checked immediatly after running?

Yes the level increased.
I didn't check the oil level untill I got home and was doing my flush.
About an hour to an hour and a half.

Rodbolt, regarding your question about checking the oil right after I stopped running I'm not understanding the significance.
Do you have any suggestions on where I should be looking for the source of the problem?
Could it be fuel considering the color? I don't smell any fuel but I can't smell squat.
I drained the oil and put fresh in but have to let it sit now as I'm going to Alaska for work for about six weeks.
Plenty of time to think about it I guess.
Thanks for any help.
