If you will pull out the one one the right you see that it looks like a snappit toy. When it hits the high temp, the end snaps out causing a circuit to connect to the alarm, when the engine cools back down, it retracts, closing the circuit, thus shutting off the alarm. The other side fits into the hole w/molded sleeve, so you don't read metal temp,it is about 1/2'X 1" and works on temp, the hotter the temp, the higher the reading, it works on a resistance type circuit. I have been messing w/mine as I have either a bad sender or bad gauge, I think it is the sender, just haven't bothered change it yet as I know the overheat alarm works and I have good water flow. In response for your 8:05 post (should not have started a new one) it is a brown wire. If you ground out the wire off the port sensor and have some turn the key on & off quickly, the guage should go all the the way to the right, indicating that you have a complete circuit. It is also a brown wire, trace it up over the top of the engine and it will go into the wire bundle that goes to the dash.
