what baits/hooks to use

I started fishing on a weekly basis about 4 months ago out in the inlets of SC (specifically North Inlet in Georgetown). I normally fish the creeks or go out to the mouth of the ocean in hopes of catching something bigger. I use a 3/0 hook and as bait either mud minnows or squid. Lately all i've been catching is shark :( Should I use a smaller hook? What other baits are good to use?

I fish for flounder, red drum, black drum, trout, and whiting.

I'm also thinking of purchasing a larger boat to go 10 or so miles out.. but I am clueless of what to use for deap water fishing.

At the mouth I've seen adjacent boats reel in large tarpen and mackeral... but what do use to catch them? and what size hook?
