Its hard to tell with the u-joints as they can "feel" good and still knock when turning, due to angles during turns that are much more extreme than in automotive use. And if they are ungreasable (no zerks) just replace them.

Once bearings of any kind get water on them, then set for a while, they will rust. So might as well replace the gimbal bearing and ujoints at the same time.
Another thing that happens with water in the bellows is the sealing surface on the ujoint shaft that goes into the drive gets rusty, eats up the seal and then you loose oil in the outdrive. So plan on replacing that seal for sure, and the yoke if necessary. Of course you need a new ujoint bellows and gasket set to install the drive to the bellhousing.

mine looked similar to yours shortly after i got my boat. but better than yours.
i ended up doing quite a bit of stuff.

gimble brg.
ujoints
water pump
water hose
drive shaft bellows
shift shaft, shift shaft seal, shift shaft lever
shift cable and shift cable bellows
ft. seal in drive
driven gear ujoint yoke
driven gear brgs + reshim
seems like i did more, but can't remember, it's been 2 years since i had the blues..

make a plan, read your service manual, ask questions here. dig in and do it and be prepared to change your plan as ya find stuff that needs attention. ya got a little work ahead of ya.

good luck with her..
