What temp should a 5.0 GXI- E run?

10 years old 150 hour original impeller it was running at 180 (per the gauge on the dash).

I changed the impeller and it's still at 180, the risers feel OK, warm but not hot. The remote oil filter housing is very hot to the touch.

My next step is thermostat unless all this sounds OK. Thanks

Way too hot but I wouldn't trust the gauge. Get an IR thermometer and check.

If the impeller had not been changed in 10 years it is probably safe to presume that the thermostat has not been changed either, or if it has that somebody would have just as likely put one in with a temperature setting for an automobile (~180F to 195F). In any case, I would change it out immediately and use one with the proper temperature setting for your application (~140F to 160F). Unless I could borrow an IR thermometer I would wait until after the thermostat changeover to buy one.
