I think it would depend on the size of the boat and the type transom and deck design you have. However the most common CSM I have seen used is 1.5 oz.
A common layup would be;
2 layers 1.5 0z CSM followed by
1 layer of 18 oz. woven roving then
1 layer csm
I recommend a top layer of finishing veil if your going to paint

That schedule yields about an 1/8" thickness of fiberglass.

You could follow that with;

1 layer of woven roving (18 oz.) over the previous CSM layer followed by
2 layers of CSM and the veil on top of that.
This will double the thickness to 1/4"

All of this depends of course on what you want to accomplish. You can go with an all CSM layup but it uses a ton of resin. The roving adds bulk and thickness. It will also add strength.
I did all of my thundercraft's new glass using CSM and the roving. It is best to lay the roving in the same time you do the CSM. The roving lays down better with fewer voids if it is put in to a wet layer of CSM.

Re: What weight CSM for coating decks and transom???

Thanks for the info
It's a 18' Grumman aluminum with an I/O, here's my link

For the transom the CSM was just to encapsulate the plywood in epoxy resin that won't crack and allow water into the wood.

For the decks, it's to add a little stiffness because they're kind of springy.
The plywood isn't rotten that I've removed, but it isn't perfect either.
