when to winterize?

Hello!. i have a 1997 1954 with a 3.0L alpha 1 (open system). At what point of the season do those with inboards start to winterize. I would like to use (fish) the boat deep into the season but only if it wont have cold weather damage. I live in central washington and it does get cold! Thanks for any input.

Normally I winterize mine before temps hit 32* at the coldest point at night, if they are calling for lows in the lower 30's it's that time of year.
