Rooster tail is a function of lost thrust. The bigger and longer the rooster tail, the slower the boat will be going off its potential top speed. The "Myth" derives from performance boats of years ago. These high powered boats did throw a big tail and thus it was equated with power and speed.
Did you ever see a 30 foot cruiser up on plane doing 25 MPH and throwing a massive well curved tail? That tail doesn't mean the boat is going very fast or is extremely powered.
There is some rooster tail on these boats, but nothing to brag about and that's the way I like it.
If you are talking about tilting the engine till the prop almost surfaces out and making a show, I don't think prop pitch will matter to the length of rooster tail you can generate. I can tell you that that is running the engine lightly loaded. It is an easy way to over-rev and possibly do damage. AND to those who know, it does not demonstrate a powerful engine (which many men equate with a big member)
