Good idea to do annual service in the fall, so you are ready to go in the spring.
In the shop, we flush the cooling system, wash any crud from the outside of the motor, remove all fuel from the lines, fuel pump, and carb, change the oils (both crankcase and LU), and spray fogging oil in the spark plug holes, while gently rotating the recoil starter a couple of cycles to ensure the fogging oil gets onto both valves. We usually remove the prop and grease the prop shaft as well.
We save the old spark plugs for the initial startup in the spring (since the fogging oil will smoke at first start). We install new plugs (if needed) after the first test run in the spring.
In cold, fresh water use, if the water pump hasn't been serviced in a few years, we will typically install a new WP kit in the fall, so everything is fresh and ready in the spring.
