Winterizing climate

I live in Southern Cal., inland, and during the winter temps. do dip below freezing (1000 ft. elevation). If boat sits outside and covered, should the boat be formally winterized? The boat will sit for months without being run.

In a word, YES.
Only the draining of the water if to prevent freeze damage. The rest of the process (Fuel stabilizer, oil changes, gear lube changes, fuel filter changes and inspection, pulling the drive and checking for water and alignment, fogging, corrosion guard etc) are done for long term storage.
