I've been using the Chef John method for cooking prime rib in the oven. It comes out perfect every time. I've tried it in the smoker, and it just never seems to have the right texture. Just made it for Christmas, and it was deelish.

I also used Spiceology brand prime rib seasoning this year. It made an excellent crust and was quite possibly my best roast to date. Sorry...no pics.:rolleyes:

I have not done a rotisserie. Like many things in life, I simply dont have the right equipment. :ROFLMAO:

Buying an offset smoker in the spring. It will be a learning curve, but I am looking forward to the experimentation.

I ran a vertical and offset smoker. I preferred the offset personally. Temperature control was better in the low range. If I wanted hot though, the vertical did better. They both had their strengths.

Can anyone compare an offset to an egg with the deflector? I've had an electric vertical (masterbuilt) and it was good until it crapped, egg is just as good if a bit more work.

Love my offset. It’s what I learned on many moons ago. With lots of help from old school members here from the past. Mike Kelton, Kenneth Brown, Mr fish and I’m sure a couple others.
I burned through a couple of the cheaper char broiler units. They made good food. Now I’m still using a kinda cheap Oklahoma Joe. Would love to get a real quality unit like a Yoder, but just can’t justify the cost. Something about food smoked over natural wood heat

Oh snap I was thinking like under a grand. Hard nope for me as well. Only reason I have a BGE is inherited from my father in law. Did see one on FB the other day for $400. Course I've prob spent $500 on accessories, or more.

Nope, my smoker works fine for my use ,can’t justify 3000$ for one.
I keep looking to replace my all stainless grill outside... to get anything comparable is in the 3k range too. But a set of burners and deflectors is $50. Dad paid... $600 like 18 years ago for it now. Grills and smokers are crazy expensive now.

Letting the egg settle in a bit (smobot does 90% of the work) then on she goes. Going to start a smoke tube as well for the first couple of hours.

DIY baby!!!! There are tone of stuff like this. Before I got the egg and built my cooking station something like this was the plan.

The grill is built into an island now. My problem is being 20 years old the damn valves are starting to go out. I have a cache of parts from parted out ones I've found over the years but that's slowly drying up.

When I can finally afford to move into a house (unrelated but housing in my area is just bonkers) the plan is a new setup and I will most likely DIY it. On top of a a pole barn or heated garage if funds allow. I also plan on building a wood fired pizza oven outside. So that'll be fun

Oh man I've lusted after a diy pizza oven but the egg can do that well but the cool factor...

Forgot to get after pics but was almost perfect. Meater wouldn't connect and when the kids got here got side tracked so when I went to check temp it was a bit high and ended at medium instead of medium rare. Still great, kids got free meal prep for the week.
