It would be best to look up a video on head gasket replacement. You need to remove both exhaust risers and manifolds, distributor(dont forget to mark the plug wires and rotor orientation before removal), carb and intake manifold, alternator, power steering pump, water pump, fuel pump bracket...
It is most likely 1 or both blown head gaskets. 5.0 gl is iron block and heads normally an overheat wont crack anything (but it is possible). Head set will cost a few hundred dollers and isnt too hard to do yourself if you know how to use a torque wrench.
Becausr of age i doubt you will easily find that exact prop. Look up what the size and pitch are for your old prop and look for an aftermarket with the same stats
I also have a VP 5.0. Just because it sounds good in neutral doesnt mean it is producing good power. When is the last time you checked the plugs or changed the fuel filter

It got on plane fine with the old 2 barrel but it would lose power and backfire at anything but wot. Not sure of the rpm, tach doesnt work, but it cant be over 2500 rpm
I just replaced my Holly 2 barrel with an edelbrock 4 barrel. It hasnt gone great so far. If it runs well after it warms up it shouldnt need a rebuild. Is the choke flap closed before you start it cold? If you open it with your hand does it close itself or stay open?
