For sure colour doesn't matter. Depending on what the tests look for, maybe anything that causes a change in colour would be identified in the tests your lab does even without noting the colour? But it seems to me that colour does seem to be telling of at least something that does matter...

They may be designed not to be linear to compensate for some none linearity in the gauge or the way the voltage signal changes if it makes part of a voltage divider circuit etc? But I see what you mean about the problem areas, it definitely shouldn't jump around in resistance like that.

I was going to say much the same about temp gauges pointing where the ECU makes them point rather than pointing to actual temp on a lot of vehicles. On a lot of modern vehicles the temp gauge will point to absolutely 'normal' temp shortly after engine start when the engine is still warming up...
