Can't seem to find a big enough fuse block

See if you have a breaker or fuse on the 12V side for the fridge. If one is there then it will switch to 12V when shore power is removed. If nothing on the 12V side, no go

Help me understand how to wire a shoreline float switch....

Your saying a shoreline float switch, but then mention 3 wires. What I think your talking about is a bilge pump with built in float switch? If that is the case, use the pic Ding posted and note the 3 wires coming from the pump and switch. One is ground, the other 2 are used to turn it ON

    Engine starts and dies.

This motor doesn't use the ALT or the oil pressure switch to keep pump ON Was that while running (pour gas down throttle body), or just with key ON?

    Volvo trim sensor

Yes it can, but you take the chance of a bad connection later. Many use adhesive shrink tubing to seal the soldered connection

Can't seem to find a big enough fuse block

18 circuits for a 24 footer is a bunch. Could use an automotive block but would need to bypass the 4-way and turn single flasher Could use individual breakers and make your own panel

Cool Fuel Pressure Regulator - Testing

The pressure should be much closer to 43 psi with or without the vacuum attached. The Reg is working, its just the pump is unable to produce the pressure. So either the pump is the issue or there is a restriction between tank and the pump

    RPM gauge

Use a handheld Tach, and connect to the input lead (which is a gray wire) on the Tach to see if you get a reading when the motor is running. If you get a reading then check connections on the gauge and if good, you need a new gauge If there is no reading then trace the gray wire back to the...

    Fuel pressure dropping.

With everything replaced including the pickup tube, it has to be the new pump. That is unless there is a fitting which is clogged. When the pump was replaced, you didn't happen to replaced the pump rod which rides on the cam? Hope not
