Chevy small blocks are easy to take apart & repair but you have to know what you’re starting with. Might want to line up a machine shop to check out the heads if you do wind up taking it apart based on testing
You can also find used GM cast iron intakes on eBay, I picked one for my old 4.3 because I thought it would have rusted through by now but it’s still good! I do check it every year.

I have a 2 speed for my ‘88 Four Winns that is about 4,000 lbs. makes it much easier but I have a roller trailer which is easier still than a bunk. My brothers boat is about the same size on a bunk and it’s much harder to winch even with the 2 speed

Not sure what Merc did when the Vortec V6 came out (they used that dreadful one piece system) but I know that V/P changed the shape of the alu down pipes to a sharper angle and installed one way check valves in the elbows to break the vacuum formed in the exhaust...they let air in under vacuum...

NLA parts are not going to be found from most suppliers like Sierra et al, you need sources that dismantle old boats/engines and sell off what is still usable.
I used the same stuff on my cast iron exhaust manifolds and it holds up well. Boat sits outside in cool damp winters and on a salt water mooring in summer…
