I would do all your laminating outside the boat.
I glue the layers together and use drywall screws.
A day later, pull the screws, then install the laminated bits
If the gauge is stuck butt you can still trim up and down, that is electrical, either a bad connection, or a failed component such as the sender or the gauge
Use the trouble shooting steps in the manual
No, the module just triggers the relay at 7 degrees up and converts the output to a simple ratio for a gauge
If you look, you can even find NOS modules and gauges.
