Volvo Penta 5.7 GS with closed cooling system

No need to run motor for the thermostat to open with closed cool. Drain the heat exchanger and anything else on the raw water side, then use AF Now for changing the oil, might want to run it a bit to suck the oil out

Prop selection 3.0 cobra -140 Hp

This isn't right, the both are 17P, a 3 blade and a 5 blade. The 5 blade would be at least like a 19 pitch (and could be a tad higher), but the RPMs stayed the same? More blades gives more lift but also takes more HP to turn. I would continue with the 17P 3 blade

    Mercruiser 6.2L MPI overheating

Those bolts can be a Beouch to do. With all the stuff on your motor makes it even worst. Probably will come down to what needs to be removed to get at it (exhaust, hoses, other)

    Stiletto prop # 20317-01417 question

Not positive with your model number, but don't think so. I have a Stiletto and all I do is remove the Merc prop and install the it, use same thrust washer. Put it on and spin it by hand

    Mercruiser 6.2L MPI overheating

Fight, fight , fight :D Maybe look at it as, if the impeller in the rear of drive was the best way to go, why are they not being used?

    Shrinkwrap gun alternative

Never used a shrink wrap gun so unable to say. My guess is they are designed to put out a lot of heat but not much flame. The HF torch is mostly flame and a lot of heat.

    98 sea ray 185, 4.3 bravo 1 steering problem

Always need as much info on the issue so folks can help determine the cause. If pump was replaced because of the issue, then it may be the steering ram. The ram tube has a slot which must be straight up and down. If it is in position then its the ram because the pump has been replaced
